As we all know food prices are continually increasing so we need to find ways of tightening our belts this summer. Finding recipes that are cheaper to produce is crucial. Here are some that should help with your food costs.

Pesto Rice Cake
A risotto cooked as a cake and served in slices with a good, ready-made tomato sauce.

Ingredients
25g/1oz butter
1 large leek (175g/6oz), finely chopped
350g/12oz risotto rice
1ltr/1¾ pints vegetable stock
100g/4oz green pesto
2 eggs, beaten
150g ball mozzarella, thinly sliced
Ready-made tomato sauce, to serve

Takes 1 hour, Serves 4

Method

  1. Melt the butter in a frying pan and fry the leek for 5-6 minutes, until soft. Stir in the rice. Pour in a ladleful of stock and simmer until almost all has been absorbed. Continue to add stock and simmer, stirring continuously, for 20 minutes or until the rice is creamy.
  2. Stir in the pesto, eggs and some black pepper. Spoon half the mixture into a 23cm/9in non-stick frying pan. Arrange the mozzarella slices on top and spoon over the remaining rice. Cook over a medium heat for 4 minutes.
  3. Put a plate over the frying pan and carefully invert the rice cake, then slide it back into the pan. Press to reshape it and cook for 4 minutes, until golden. Serve with freshly made tomato sauce.

Butter Bean Frittata

Ingredients
15ml/1tbsp olive oil
1 onion, sliced
1 red pepper, diced
75g/30z small broccoli florets
2 herby pork sausages, cooked and sliced
4 eggs, beaten
30ml/2tbsp milk
15ml/1tbsp fresh parsley, chopped
100g/4oz butter beans, cooked as per pack instructions
Freshly ground black pepper
25g/1oz cheddar cheese, grated

Serves 4

Method

  1. Heat the oil in an omelette pan. Add the onion, pepper, broccoli and sausages and fry for 5 minutes, stirring.
  2. Beat the eggs and milk together. Stir in the parsley and beans. Season and add to the pan. Cook for 10 minutes until beginning to set.
  3. Sprinkle the top of the omelette with cheese and cook under a hot grill for 2-3 minutes until cooked through. Serve.

Basic cooking instructions
Soak butter beans overnight in cold water.
Rinse thoroughly and place in a pan with unsalted water.
Boil rapidly for 10 minutes, then simmer for a further 1¼ hours.
Do not eat raw beans.
