National Nut Day

National Nut Day, established in 2016 by Liberation Foods, is celebrated on 22nd October to promote healthy living and the importance of Fairtrade nuts, emphasising sustainable farming practices. The day aims to raise awareness about the benefits of consuming ethically sourced nuts, supporting both farmers and environmental sustainability.

 

From almonds and walnuts to pistachios and cashews, nuts are packed with nutrients, including healthy fats, protein, fibre, vitamins, and minerals. Whether enjoyed as a snack, in baking, or as an ingredient, nuts are incredibly versatile.

Luxury Salted Nut Brittle

Ingredients


370g caster sugar

2 tbsp water

400g golden syrup

200g salted peanuts

200g walnuts, roughly chopped

120g butter

8g micro basil or basil, chopped

Sea salt

Makes 24

Method


Line a tray with parchment paper. 

 

In a large, heavy-bottomed saucepan, combine the sugar, water and golden syrup. Place the pan over medium heat and stir gently until the sugar has completely dissolved. Once dissolved, stop stirring and bring the mixture to a boil.

 

Let the sugar mixture cook and bubble until it turns a golden amber colour, which should take about 10-15 minutes. You can use a thermometer if you have one - the mixture should reach around 150°C (300°F), also known as the “hard crack” stage. Once it reaches this stage, quickly stir in the salted peanuts, walnuts, butter, basil and sea salt.

 

Mix well and pour onto the tray lined with parchment paper. Allow to go cold.

 

Place a sheet of parchment paper or clean tea towel over the brittle and bash with rolling pin to break into shards. This will keep for a couple of weeks… if it lasts that long!
